Blizzard Comfort Food

On snowy days like today, after a couple of hours of shoveling in the cold… your body craves comfort food!

If you’re like me, you can eat breakfast anytime of day. So here is a super easy breakfast burrito recipe that’ll help warm you up, fill you up and make your soul happy.

Blizzard Burritos:

1 pound spicy breakfast sausage (Jimmy Dean is my favorite)

4 – 5 medium eggs

1 package of large tortillas

1 package of shredded cheese (Mexican Blend or Cheddar Jack is good)

1 can of Stokes Green Chili

1 tub of French Onion Sour Cream Dip

Pour green chili into a small pot and warm over medium heat, stirring frequently. Once the chili is warmed, cover and let simmer on low. Brown sausage in a large skillet. Crack the eggs into a bowl and beat with a fork until the yolks and whites are mixed. If you like fluffy eggs, add about 1/4 cup milk to egg mixture. Pour the eggs over the sausage and mix together. Cook entire mixture over medium-low heat until eggs are done.

Serve:

Warm tortillas one at a time with a griddle pan. Place the tortilla on a plate and scoop two to three large spoonful’s of sausage/ egg mixture into the middle of the tortilla.  Pour a spoonful of chili over the mixture and sprinkle with cheese. Fold the top and bottom of the tortilla over so they’re touching the burrito mixture. Fold the right side of the tortilla completely over the mixture, then the left side over the right. Turn the entire burrito over so the flaps of the tortilla are now touching the plate. Spoon green chili over the burrito and garnish with cheese and a dollop (or two) of French onion dip.

(Burrito folding is practically an art form. If it’s easier, leave the top and bottom of the burrito open. Also, these are ingredients I happen to have on hand. You can adjust the ingredients to meet your needs or to whatever you have on hand. But please, avoid driving to the store (or anywhere) until the roads are better.)
