Sweetcorn – always a yes please! This Charred Sweet Corn Salad combines texture, a little heat, and a lot of bright flavor with lime juice and cheese. Enjoy! –  Tracy

Recipe:

6 ears of sweet corn (3 raw and 3 charred on the grill)
2 red Fresno peppers chopped
1/2 jalapeño (seeds removed)
1 shallot chopped 
1 tsp Kosher salt
1/4 cup fresh lime juice
Handful of chopped fresh parsley
1 cup crumbled Cotija cheese
