“I know I’m not supposed to pick favorites…but this is my favorite! My Red Bird Farms Crispy Chicken Thighs in a mustard cream sauce!” – Tracy

6 Bone-In, Skin-On Red Bird Farms Chicken Thighs (2ΒΌ Pounds)
Kosher salt and Coarse Black Pepper
Olive Oil
1 Large Yellow Onion – Sliced
2 Tablespoons Dry White Wine
8 Ounces Mascarpone
1 Tablespoon Good Dijon Mustard
1 Teaspoon Whole-Grain Mustard
1 Tablespoon Chopped Fresh Parsley

Pat the chicken thighs dry with paper towel (this is a very important step to make sure they sear) Season with salt and pepper. Heat the olive oil in a cast iron skillet on medium heat until the entire skillet is hot. Place all 6 thigh in the hot skillet and do NOT move at all for 11-12 minutes. Flip all the chicken over and add the onion slices. cook another 11-12 minutes without moving. Remove the chicken and onions and set aside. In the same skillet add the white wine to deglaze the pan. Saute the mascarpone, herbs and mustard together. Add the chicken and any juices back in the skillet. Enjoy!
