Heel’s Kitchen | Feta Watermelon Salad with Simply Grilled French Drumsticks

1 package of Red Bird Farms Chicken Frenched Drumsticks
4 cups Arugula
Olive Oil
1 ½ Cups Diced Seedless Watermelon
1 Cup Crumbled Feta
½ Cup Thinly Sliced Red Onion
¼ Cup good Balsamic Vinegar
Salt and Pepper
Directions:
Preheat your grill to a medium heat. Grill the Frenched drumsticks for 8 minutes each side (flip over only once). Remove from grill and cover with foil to allow the juices in the chicken to set. On low heat, simmer the balsamic vinegar until it starts to reduce and thicken slightly. Remove from heat so it can start to cool. Meanwhile, layer a serving platter with fresh arugula and drizzle with olive oil. Start to build your salad by topping evenly with diced watermelon, thinly slice red onion, crumbled feta. Drizzle over the entire salad the balsamic and top with kosher salt and coarse black pepper. For the croutons, cut crusty bread into bite sized chunks, drizzle with olive oil or butter-bake at 350° for 4-5 minutes or until golden brown Enjoy!
